HOUSEKEEPING QA

SUMMARY:
The Quality Assurance Inspector is responsible for the on-going inspection of guest rooms to ensure the quality standards are consistently being met by all room attendants. The QA Inspector will create daily reports with detailed notes and scoring to be used by the Executive Housekeeper and Housekeeping Supervisor to coach and reward room attendants. Ensure quality service above all in our guest rooms.

ESSENTIAL FUNCTIONS:

Complete 15-20 room inspections daily with detail reporting handed in at the end of the shift
Rectify outstanding quality issues immediately with room attendants.
Understand the housekeeping process of cleaning a guest room Inspect VIPs before 12 noon according to our Housekeeping standard operating procedure
Inspect areas of public space as assigned, create a punch list and distribute to appropriate departments
Check and report out any engineering issues found in rooms
Maintain open communication with management staff to ensure quality service is being provided and report all challenges they may incur
Other duties as assigned by the Executive Housekeeper

KNOWLEDGE, SKILLS AND ABLITIES:
Education: 
High School Diploma, GED or equivalent
Experience: Must have at least 2 years of housekeeping experience

Skills, and Abilities:
Ability to train and supervise with strong leadership skills
Ability to make quick and efficient decisions to benefit the team and guest.
Ability to navigate property management system
Ability to professionally communicate in English and Spanish both written and spoken word
Ability to use Microsoft office including Excel, Outlook and Word
Knowledge of basic sanitation requirements/controls and applications of relevant chemicals.
Knowledge of basic safety requirements
Must be a positive team player who is able to accept and follow direction
Must be an excellent role model with high ethics
Must meet Wave Crest grooming standards

ESSENTIAL DUTIES AND RESPONSIBILITIES include the following while other duties may be assigned


• Improves ADR (average daily rate) and REVPAR through the proactive application of yield management techniques and utilizing all technological means to do so.  Maintains statistical report(s) used to justify pricing decisions, restrict inventory and control market segment distribution.
• Participates in business review meetings with the Sales Department as needed to manage inventory and rate as well as maximize banquet space.
• Manages yield management system including group analysis, updating forecast information, tracking historical sets and monitoring rate hurdles and oversell.
• Conducts weekly yield meeting involving rate strategies, group pick-up and potential business, group and leisure pace, competitive analysis and financial room forecasts.
• Completes annual budget for guestrooms.
• Produce monthly 30-60-90 day rooms forecast for both group and leisure segments.
• Prepares 14 day forecast on a weekly basis.
• Establishes rates and allotments for wholesale and consortium.
• Maintains relationships with wholesalers through management of allocations.
• Complete weekly free sale calendar.
• Oversee work of Reservations Manager to ensure that reservations are being converted and sold in order to maximize revenue.
• Support reservation agents, group sales managers, leisure sales manager, and executive team with communication of vital rate and statistical information as needed.
• Develop and maintain strong working relationships with the operational departments of the hotel; special emphasis toward front office.
• Oversees Reservations Manager to ensure that guest history is being captured in order to utilize for reporting and marketing purposes.
• Monitor competitive analysis.
• Takes the lead in the maintenance of the relationship with Hilton Worldwide Reservations and establishes and keeps up-to-date all new rates/strategies and hotel descriptions in the ONQ system.
• Is proficient with all computer systems in the office including Excel, Microsoft Word, ONQ and Delphi.
• Prepares reports (Daily call analysis, call conversion report, pace, group pick-up report, source of business, market share penetration etc.)
• Works with VP-Sales and Marketing to coordinate marketing efforts (advertising, collateral, packages, brochures etc) as it relates to group and leisure business to impact need periods.
• Responds to incoming e-mails.
• Build and update rates in ONQ
• Build packages in ONQ

SECONDARY RESPONSIBILITIES/ADDITIONAL FUNCTIONS-TASKS:
• Interviews reservations staff.
• Monitors and coordinates waitlists.
• Clean up all non-guaranteed reservations.
• Sets incentive goals for reservations agents.


SUPERVISORY RESPONSIBILITIES: The Director of Revenue Management is responsible for the immediate supervision of the Reservations Manager and all Reservations Agents and to assure that all tasks and duties are performed properly.


EDUCATION, EXPERIENCE AND TRAINING: Hotel experience preferred.  2 years supervisory experience required.  Required computer knowledge to include Excel, Microsoft Word and some type of Property Management or Central Reservations system.  High School diploma required.  College degree preferred.  Hilton ONQ experience preferred.

LANGUAGE SKILLS: Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals.  Ability to write routine reports and correspondence.  Ability to effectively present information in one-on-one and small group situations to customers, clients and other employees of the organization.

REASONING ABILITY: Ability to apply common sense understanding to carry out detailed but uninvolved written or oral instructions.  Ability to deal with problems involving a few concrete variables in standardized situations.

Director of Front Office is responsible for ensuring the smooth operation of guest services, providing all guests with quality service while maximizing room revenue and productivity, and developing managers and employees.
RESPONSIBILITIES:
1.    Coordinate the organizational and administrative functions in all areas of the Rooms Division,  ensuring total compliance with standards of operation;

2. Start food items that are prepared ahead of time, making sure not to prepare over estimated needs.
3. Date all food containers and rotate as per SOP, making sure that all perishables are kept at proper temperatures
4. Check pars for shift use, determine necessary preparation, freezer pull and line set up. Note any out-of stock items or possible shortages. Assist in keeping buffet stocked.
5. Return all food items not used on next shift to designated storage areas, being sure to cover/date all perishables.
6. Assist in setting up plans and actions to correct any food cost problems; control food waste, loss and usage per SOP.
7. Assist in prep work of vegetables and condiments as required for the next shift.
8. Other duties as assigned. 

EDUCATION:     High school education or equivalent experience
EXPERIENCE:   Minimum 1-2 years of cooking experience in food service (restaurant, in room dining, banquets) or related work experience.

SUMMARY:   

Assist with planning and managing of the Restaurant, Fire Lounge, In Room Dining and other food and beverage outlets as appropriate in order to achieve customer satisfaction, quality service, compliance with corporate/franchise policies and procedures and federal, state and local regulations while meeting/exceeding financial goals. 

ESSENTIAL FUNCTIONS:

1. Assists with managing the team members in the various outlets in order to attract, retain and motivate the employees; schedule, train, develop, empower, coach and counsel, resolve problems, provide open communications and recommend discipline and termination, as appropriate.

2. Assists with implementation of company programs and manage the operations of the Restaurant, Fire Lounge and In Room Dining and any other food and beverage outlet as required to ensure compliance with SOPs, safety regulations and federal, state and local regulations to ensure am optimal level of service, quality and hospitality are provided to the guest(s).

3. Assists with forecasting, implementing and monitoring/controlling outlet budgets and their components (labor costs, food costs, beverage costs, supplies, equipment, etc...) to maximize revenue and minimize expenses while ensuring adequate supplies and staff are on hand to provide top quality customer service. 

4. Assist with recognizing and responding to customer trends, needs, issues, comments and problems to ensure a quality experience and enhance future sales prospects.

ESSENTIAL FUNCTIONS:


·        Guest service is a crucial part of every employee's job. While providing that your primary role is the Audit, balance and report on all food and beverage outlets (e.g. restaurants, lounges, banquets, room service) cash and credit operations to include but not limited to checks, over/short figures/tally sheets, deposits, counts, house charges, promotional materials, postings, etc. and reset all registers to ensure accurate, timely information.
·        Audit, balance, post and report on the front desk to include but not limited to; room charges, phone calls, zero balance folios, corrections, adjustments, taxes, disputed charges, over/short figures, deposits, etc., to ensure accuracy and verify proper cash handling procedures are followed.
·        Audit, balance and prepare, verify and report on Room information to provide rooms management with a picture of how they are performing.
·        Prepare and input statistics and income journal sheets for preparation of daily reports.
·        Run night audit final after insuring all revenues are in balance nightly.
·        Perform the duties of a Front Desk Agent including express checkouts.Perform PBX duties in taking and placing wake-up calls, as needed.

SUMMARY:

Serves food and drinks to guests demonstrating and promoting positive guest relations. Works with a point of sale system, accepts money, and makes changes when needed. Assists Bartender with stocking, making coffee, and general cleaning.

DISHWASHER - STEWARD (Seasonal)

BASIC PURPOSE: To wash all kitchen dishes and utensils such as pots and pans and also to clean any equipment such as mixers, braisers and steam jacketed kettles.

ESSENTIAL FUNCTIONS:
1. Wash dishes, pots and pans.
2.  Maintain a clean work environment in dishwasher area, mop floors.

KITCHEN SUPERVISOR

SUMMARY:
Train, supervise and actively participate in all the food productions areas of the kitchen, mainly in the outlets, in order to maintain Interstate Hotel and Resorts high standards of quality.

ESSENTIAL FUNCTIONS:
• Supervise in the production and preparation areas of the kitchen in order to attract, retain and motivate the employees while providing a safe work environment; interview, schedule, train develop, empower, coach and counsel, resolve problems, provide open communication, recommend and conduct performance and salary reviews, recommend discipline, as appropriate.   
• Visually inspects, selects and uses only the freshest fruits, vegetables, meats, fish and other food products of the highest standard in the preparation of all menu items.  Reads and employs math skills for following recipes.  Prepares pre-orders for supplies and food items for production in work station.
• Assist with scheduling of culinary staff so that proper coverage is maintained while keeping payroll costs in line.
• Observes production flow and makes adjustments in order to adhere to control procedures for cost and quality.
• Monitors to ensure proper receiving, storage (including temperature-setting) and rotation of food products so as to comply with Health Department and Eco-Sure regulations, including coverage, labeling, dating, and placing items in proper containers to ensure product freshness.
• Assigns in detail, specific duties to all employees under supervision of the Executive Chef for efficient operation of kitchen and service.
• Supervises daily cleaning, inventorying of walk-in and reach-in boxes.
• Checks to see that all equipment in the kitchen is clean and in proper working condition and write work tickets for any equipment in need of repair.


OTHER:
Regular attendance in conformance with the standards, which may be established by the property from time to time, is essential to the successful performance of this position.
Due to the cyclical nature of the hospitality industry, employees may be required to work varying schedules to reflect the business needs of the hotel.
Upon employment, all employees are required to fully comply with IHRCO rules and regulations for the safe and efficient operation of hotel facilities. 

NON-ESSENTIAL FUNCTIONS:
• Performs other duties as required, i.e. special orders, buffet presentation, V.I.P. parties, writing specialty menus for promotions, etc.
• Assists in writing, maintaining and updating all menu specifications, recipes and pictures, production forecasts, and ensures same are being followed.
• Communicates and assists the Executive Chef in creating innovative products.

KNOWLEDGE, SKILLS AND ABILITIES:
The individual must possess the following knowledge, skills, and abilities and be able to explain and demonstrate that he or she can perform the essential functions of the job, with or without reasonable accommodations, using some other combination of skills and abilities.
• Thorough working knowledge of hot and cold food preparation.
• Good working knowledge of accepted sanitation standards and Health Codes for the state of California.
• Extensive skill in usage of slicers, mixers, grinders, food processors, etc.
• Basic mathematical skills necessary to understand recipes, measurements, requisition amounts and portion sizes.
• Ability to read, write and understand the English language in order to complete requisitions read recipes and communicates with other employees and managers.
• Sufficient manual dexterity of hand in order to use all kitchen equipment, i.e. knives, spoons, spatulas, tongs, slicers, etc.
• Ability to grasp, lift overhead and/or carry 50 lbs maximum, or otherwise, move or push goods on a handcart/truck weighing a maximum of 350 lbs. on a continuous schedule.
• Ability to perform duties in confined spaces.
• Ability to perform duties within extreme temperature ranges and to stand for long periods of time, up to and over eight hours.

QUALIFICATION STANDARDS:
Education:
Any combination of education and experience equivalent to graduation from High School or any other combination of education, training or experience that provides the required knowledge, skills and abilities.  Culinary or Apprenticeship Program preferred.

Experience: Minimum of two years experience as a Restaurant Chef in a similar size operation.

Licenses or Certificates: Ability to obtain any government required license or certificate. 

Grooming: All employees must maintain a neat, clean and well groomed appearance (specific standards available).

BANQUET CAPTAIN

SUMMARY: Supervises the banquet functions for the hotel. Assists in all management operations, including scheduling, billing, training and control. Operates according to established procedures and standards.

ESSENTIAL FUNCTIONS:
1. Assist the Banquet Manager in hiring, training, coaching/counseling, discipline of all Banquet Team Members.
2. Supervises the consistency of quality and efficiency of Banquet food and service.
3. Works closely with F&B Management to deliver an outstanding and seamless experience to guest.
4. Attends regular operational meetings (BEO meetings) to ensure effective coordination and cooperation between departments.
5. Be visible in all Banquet events on his or her shift, provide recognition, promote good public relations, and handle complaints, concerns or special requests for guests, clients, and group contacts.
6. Establishes a timeline for all events assign to him or her so they are delivered on time and in according to guidelines stated on the Banquet Event Orders.
7. Establishes and maintains par stocks of all supplies.
8. Ensures the cleanliness of all Banquet areas including banquet rooms, banquets. Storerooms, guest hallways and back of the house areas by establishing and enforcing clean-up schedules.
9. Prepare and present event pre briefings.
10. Assists in preparing and adjusting banquet schedules based on changes, late additions of number of guests per event following the Banquet Labor Standards.
11. Ensure and enforce health, safety and alcohol consumption/service(TIPS) guidelines.

KNOWLEDGE SKILLS AND ABILITIES

EDUCATION: High school diploma, GED or equivalent education and experience.

EXPERIENCE: 2 years supervisor experience in a food and beverage environment.

ROOM ATTENDANT (HOUSEKEEPING)

SUMMARY: Clean and supply all daily assigned rooms and report all damage, mechanical deficiencies, suspicious activities or theft in accordance with all housekeeping procedures and standards and safety and security rules and regulations to ensure guest satisfaction.


ESSENTIAL FUNCTIONS:
1. Clean guest rooms and stock with appropriate supplies in the prescribed manner while following safety and security procedures and regulations.  Sixteen (16) rooms per day; fifteen (15) during summer season.  To include but not limited to:
- Picking up trash
- Changing linen and making the bed
- Cleaning entire bathroom
- Sweeping and dusting guest room
- Cleaning the windows and balcony 
2. Retrieve, stock, restock and store the housekeeping cart according to prescribed housekeeping, safety
and security procedures and regulations. 
3. Receive assigned section, keys, supplies and any priority room requests from the Senior Housekeeper.
Turn in keys and unused supplies at end of shift. 
4. Respond to guest requests and report guest issues and complaints in a hospitable manner to ensure
guest satisfaction. 
5. Report any missing articles, damage or mechanical problems to the Senior Housekeeper and turn in
articles left in room. 
6. Special projects and support as assigned.

KNOWLEDGE, SKILLS & ABILITIES:
Education:  
No formal education required; GED is preferred
Experience:   Prior housekeeping experience in a hotel environment is preferred

SKILLS and ABILITIES:   Must be able to communicate in English
Must have the ability to efficiently clean rooms during an eight hour working day

BANQUET BARTENDER -- ON CALL

SUMMARY
Set up, tend and breakdown banquet bars according to standard policies and procedures in a safe, accident-free manner.

ESSENTIAL FUNCTIONS:
Check BEOs to determine function, number of guests and type of bar (house, premium, cash, open, etc.).
Set up portable bar in function area according to standard policies and procedures.
Make and serve drinks to guests in a cordial, professional manner following established guidelines, policies and procedures regarding beverages and safety controls as prescribed by the state and the hotel. Track and log alcohol served.
Remove all liquor glasses from tables, tablecloths, trash and liquor from function area.
Remove all trash and liquor from area and return bar to storeroom.
Breakdown, clean bar thoroughly; wipe surface areas and empty water in portable bar. Return all equipment and supplies to proper area.

ESSENTIAL FUNCTIONS:
Read BEO and know how to complete a set-up.
Set tables in assigned area correctly and uniformly.
Keep station neat and clean while servicing guest per established policies and procedures.
Use proper in-room clearing and aisle tray break-down buffet or other special food service tables and equipment.
Assist Lead Banquet Server in setting up/breaking down buffet or other special food service tables and equipment.
